The Naish 7'3" looks amazing. I'm currently working on persuading the wife that "we" need one! Maybe by next summer...
Excluding Jacky riding one (plus you did say "man" up), I can only throw 3 names out that could handle the 7'3....I know I don't have a prayer.

Balance yes. Catch a wave, probably not. Although it would be a good training tool for balance
Is there a difference between board designs that reduce yawing? At the same paddling speeds,do boards "yaw" less for lighter or shorter individuals?
I find the limitation of the shorter boards to be when I need to chase down a wave to get into position.
